Two Turkeys on a Medium Spit

Along with Uncle Greg, River Town Ironworks, Inc. has come up with an exciting and fun way to cook up that favorite meat you've been waiting to try over the open fire.  Uncle Greg came up with this idea in the late 1980's at his cabin, when he and a few friends were looking for a way to cook over the campfire.  Now he would like to share this great product with you.  This rotisserie style spit is great for cabins, lodges, campsites, or even just in the backyard.  Simply place the meat on the spit rod, season or marinate to your preference, and set over the fire.  All that is left to do is rotate the meat every once in a while, and then its time to relax and enjoy your meal.  Campfire cooking is now fun and easy with Uncle Greg's Backwoods Cooking Spits.

Step-1

Carefully slide whatever you choose to cook onto the spit rod. CAUTION the end of the spit rod is very sharp...  DO NOT use your hand as backing when sliding meat onto the spit rod.

Slip threaded rod on to the spit rod and line up with threaded rod that is already on the spit rod. Carefully slide one meat clamp over the the threaded rods until contact is made with the meat.

Use wing nuts to secure the meat clamp.

Now you're ready to put your meat over the hot coals or embers.

Helpful Hints:   

Marinate meats with your choice of sauces before loading onto spit rod for 
      cooking.  Injectable marinates are recommended.

Wash hands before and after the handling of raw meats.
Rotate meat periodically to assure that it is thoroughly  cooked.
Following each use, it is recommended to clean the parts of the spit that come
     in contact with the food you are cooking.  Use hot soapy water.  Following
     each cleaning, coat the parts that were washed with cooking oil.
For extended life of cooking spit, store in an enclosed well ventilated area.
Make sure recommended minimum internal temperatures have been met
     when cooking any type of meat, especially poultry and pork.  Use the
     following table:

          Pork                    145 deg F                         
          Beef                   145 deg F
          Veal                    145 deg F
          Lamb                  145 deg F

          Fish                    145 deg F                                            
Note:  These temperatures must be maintained for at least 15 seconds.
